Frozen Banana PB Bites

Ingredients
  • 2 Bananas
  • Peanut butter (as much as you’d like to use)
  • 32g Dark Chocolate (3 big squares)
  • 1 tsp Coconut Oil
  • Sea Salt Flakes (optional)
Directions
  1. Line a plate with parchment or waxed paper and set it aside.

  2. Slice bananas into about half an inch thick. 

  3. Put a teaspoon of peanut butter on one slice of banana and top with another slice of banana.

  4. Place them on the lined plate and freeze for at least 20 mins. 

  5. Mix chopped chocolate and coconut oil in a bowl. Place the bowl in another bowl with hot water inside to melt them. You could always place the bowl over boiling water. 

  6. Once the banana sandwich is chilled, dip it into the melted chocolate mixture and place it back onto the lined plate. Sprinkle with sea salt flakes before the chocolate solidifies. Repeat with remaining banana sandwiches. 

  7. Freeze for at least 30 mins. 

  8. Enjoy now or transfer them to a freezer-friendly container to enjoy later.

You’re one bite away from heaven.

These little Banana Bites will literally trick your brain as if you were eating ice cream. 

The first bite of crunchy chocolate texture will crack your brain open to heaven. Followed by frozen pieces of banana that will melt in your mouth just like ice cream.
On top of that, the peanut butter in between will create harmony with the banana to add richness as if it completes this ice cream-like experience. 

Perfect amount of sweetness, bitterness, richness, and saltiness.

Ingredients

Bananas

I don’t recommend using super ripe bananas as they’re too soft to handle. Bananas before getting spotty are the perfect ones for this recipe!

Peanut Butter

Any kind of peanut butter works great. Crunchy peanut butter would be fun. Smooth peanut butter would support the creaminess.  

Dark Chocolate

I like using higher than 72% cacao chocolates. I usually chop up a chocolate bar instead of using chocolate chip as they tend to be higher quality  than chocolate chips.

Coconut Oil

By mixing in some coconut oil, it’ll thin up the melted chocolate and make it easier to dip.

SEA SALT FLAKES

This is the one ingredient that takes this simple recipe to a whole different level of yumminess. If you don’t have any, sprinkle some regular salt on top. 
Salt enhances sweetness and suppresses bitterness. There are reasons why such “Sea Salt Chocolate” sells.
Plus, the crunchy texture always goes well with something creamy.  

Add-ins, Toppings

You can definitely get creative. Maybe mix in some chia seeds to the peanut butter or even jam! Top with chopped peanuts, pistachio, pretzels… I’m drooling here as I write! 

Direction

Directions 

  1. Slice bananas half an inch thick. Of course, feel free to go thicker, thinner, as you like!
  2. Put a teaspoon of peanut butter onto a slice of banana. Top with another slice of banana to make a sandwich. Again, you can put as much as peanut butter here. Well, if you want something pretty, then go conservative. If you want something frickin’ delicious, then go out of your way!
  3. Place them on a parchment or waxed paper lined plate and freeze them for at least 20 mins.
  4. Mix coconut oil and chopped chocolate in a bowl in a bowl of hot water. You can also melt chocolate over a pot of boiling water too.
  5. Melt until smooth.
  6. Dip each banana sandwich into the melted chocolate mixture. You can go the whole way, or you can go halfway, like in the picture below. Sprinkle some sea salt flakes before chocolate solidifies and repeat with the remaining bananas.
  7. Freeze for at least 30 mins.
  8. Transfer to a freezer-friendly container to store. (You probably won’t have to worry about storage… As my batch always disappears within two hours!;) )

When Choosing Ingredients

Peanut Butter

It is ideal to use natural organic peanut butter. No-stir or conventional peanut butter will have additives to keep them smooth and soft. If you see your peanut butter’s oil and solids being separated, then that’s a good sign! 

Dark Chocolate

High cacao content (> 70%) / Low sugar content / Few additives and overall ingredients / No added flavor / No preservatives / Not “dutch/dutched” or processed with alkali.*

*If your chocolate says “processed with alkali” on the nutrition label, it will have fewer flavanols.
Processing with alkali is called Dutching, and it’s done to reduce acidity, making the chocolate a darker color (and arguably improving the flavor).
There is nothing unsafe about dutching – it may make the flavor more appealing to some but lead to fewer health benefits.

It is also best to pick organic chocolate since conventional chocolate will have sugar and cacao aided by chemical fertilizers, pesticides, herbicides, etc.

Bananas

It is ideal to pick organic bananas considering nutrient content, environment, and chemicals.
